mpmpencilI’m back and my menu plan is even on time this week! I do believe that’s a first for me. Anyways, we’ve been eating way to much lately and much to unhealthy for my liking so this week is all about healthy meals. My recipes are coming mostly from Ellie Krieger from Foodnetwork.com. I will be putting my own spin on things though.

Weekend Breakfast:

Pancakes and waffles    

Weekend Lunch:

Salads, sandwiches, or leftovers

Dinners:

Monday: Steak tacos with avocado pico de gallo

Tuesday: Leftover pulled pork

Wednesday: Leftover tacos

Thursday: Chicken Fettuccine with Red Pepper Sauce

Friday: Roasted pork loin with parsley sauce

Saturday: Thai style talipa with coconut curry sauce

Sunday: Crab cakes and tartar sauce

I’m going to attempt to post the recipes for this meal plan during the week as I make them. In the event, but more likely when, things change, I’ll let you know what’s getting the boot from my menu. If you see a recipe that you’re absolutely dying for and it doesn’t get posted, just shoot me and e-mail or leave me a comment and I’ll be more than happy to give it to you.

Square Foot Garden Update 1

An overview of my first gardenI’ve learned so much this year! The garden from the other sideMy garden didn’t turn out too great this year, although I think it did alright seeing as this is my first time gardening, but I think I have figured out why.

 

Next season is going to be SO different.

 

 

 

Dead Cucumbers

My cucumbers have died along with the beans I tried to plant now for like 3 times.

 

 

 

 New tomatoes on my Early Girl

My tomatoes are doing alright, I was thinking once the few tomatoes that are on it ripen I’ll rip them up but then today I saw a few new tomatoes. So I think I’ll wait until it stops producing.

 

 

 

 

 

 

Melon!My one melon is doing great. I thought it was a cantaloupe but I’m wondering if I just didn’t get it confused with one of the other melons. I’ll just have to wait and see.

 

 

 

 

 

 

 

Corns

My corn has produced a lot of ears but I’m not sure how big they will get. I’m not sure of when to pick them either.

 

 

 

 

 

 

 

Bell PeppersMy bell peppers are getting a little bigger. I’m starting to think that maybe they are going to stay this size.

 

 

 

 

 

 

 

Once this box runs it coarse for the season I’m going to have my Hubby build me a new one to replace this. I want it to be a little taller and it needs to have a plywood bottom. In fact I want it just like the new addition he built me. I’ll post about that soon! so stay tuned and happy gardening!

P.S. I just had to throw in a picture of my little BooBoo helping me water. He’s the best gardening helper a mommy could ever ask for! And yes, he is still in his PJ’s, we water early in the morning before it gets too hot.

No menu plan for me this week. I expect that this will hopefully be the last crazy week at work for a while anyway. So that means I go yet again without a menu plan for the week because, well,  I did no grocery shopping this weekend. Instead I was working and what little free time I had, I spent prepping the garden for fall and winter! I’ll post about that soon, I’m so excited about it. I just hope I didn’t get in over my head. Don’t worry about our food situation though, we won’t be eating out all week. Instead, we will be playing Survivor, food style. Whatever is in the house will be what I use to come up with meals and if you remember from this post, I have plenty of food in my house. My stock pile seems to be getting smaller though. I’ve come to the conclusion that I don’t need to stock pile for a while, at least until I make some more room in the house. It’s just so hard to resist a good deal. At what point do you decide to pass on an opportunity to stock pile?

If I come up with a recipe that I think is fantastic I’ll go ahead and post it. And if not, I’ll be back next week with a Menu Plan.

Shopping Trip

Look at all my loot for $144.00! This was probably the best shopping week I’ve had. I was so excited when I got home and totaled everything up. Had I not purchased things on sale and not used coupons, I would have paid $224.00. Some of the best deals I got were;

 Menu Plan Monday!

Now this is sad. I can’t believe that I haven’t been posting any new blogs. My work is super crazy busy right now and I’m hoping to see a light at the end of the tunnel by the end of this month. So until then, please be patient with me. Although, I’m sure that the maybe 3 people who read this blog (all of which are probably related to me) understand and don’t really care. : ) My Hubby will be gone this weekend which will give me the perfect opportunity to work on some new posts. I plan on stepping it up soon, so stay tuned.
